Easy Chicken Dinner (with Gravy)
Just got home from work? Entirely too busy to put any thought into dinner? I gotchu... This dinner will please even the pickiest member of your family and pack the flavor in!
What you need:
This recipe makes enough for four, or two with left overs for lunch and only takes about ten minutes to prep;
4-6 chicken thighs
Small bag of gem stone or fingerling potatoes (really any thin skin potato works with this, use your favorite)
1tsp of salt
1 tbsp oregano
1 tbsp crushed red pepper flakes
1 tsp of rosemary
1 tsp of thyme
1/4 cup of water with chicken bullion cube dissolved in it.
One large onion
2 cloves of garlic
1 red bell peper
1 yellow bell pepper
2 tbs olive oil
How to make it:
Take chicken out half hour to hour before you’re ready to cook so the chicken comes to room temperature. This will ensure an even cook on all pieces.
Preheat your oven to 400f or 204c
In a large pyrex or other baking dish place your chicken thighs skin side up
Dice your potatoes, onions, garlic and peppers and add to the pan
*Tip* if you sprinkle a bit of course salt on top of your garlic before chopping it, it will stay in one place and stick to your knife less.
Sprinkle the herbs and spices over the top of everything and then drizzle with olive oil.
Pour the water/bullion mix into the side of the pan, not over the top of everything. This is to keep everything moist and prevent the potatoes from sticking to the bottom. It also makes a heck of a nice gravy.
Place in oven and let bake for 45 minutes or until chicken comes to 165f internally with a meat thermometer.
Serve with your favorite side. Rice is my go to but also salad, asparagus, green beans or broccoli are my favorites.
To make a pan sauce with the liquid in the pan. Heat 1tbs of butter in a sauce pan. Once melted add a tbsp of flour and cook four 1-2 minutes to remove the grittiness of the flour. Slowly add the liquid from your chicken pan to your sauce pan and whisk thoroughly to incorporate the flour. Bring to a simmer and let cook for about 5-10 minute over med-low heat, whisking every 30sec or so the keep from clumping. Once it has thickened to your liking, remove from heat and serve.
Note: Once gravy is removed from heat it will continue to thicken a bit. If you save it for the next day, it will thicken further, you can add it to a sauce pan with a bit of water to bring it back to the consistency you prefer.

We have family visiting us from the states! (EXCITMENT!) And after a day at the beach what better way to feed everyone AND put minimal effort into dinner?! This does it all and it’s freaking delicious!
So… because I have family visiting… I wont bore you with a long ass blog today. Just know that we are all happy, healthy and loving spending the whole day on the beach!
I’ll TRY to be more regular about these blogs. It’s been a little hectic but this is exactly why I do not charge a subscription price for these. I also just don’t want the pressure of having to write something just because I have to. I like wanting to write.
